Xylitol


How come Xylitol isn't more widely used in the food industry? Excellent question, and I have no idea.  I never knew about xylitol, have never run into it in the literature (though I knew of it from biochemistry course sugar structures - (2R,3r,4S)-Pentane-1,2,3,4,5-pentaol, 5 carbon chain with 5 hydroxyl groups).  So I read about it quickly, and am impressed.  Clearly xylitol needs a better lobbyist and publicity agent.
